White Cheese and Chicken Enchiladas

Ingredients:
1 1/2 lbs Shredded chicken
1 (15 oz) can Corn
1/2 cup Greek yogurt
1 cup Green enchilada sauce
1 teaspoon Cumin
1/4 teaspoon Salt
1- 4oz can green chilis
1 teaspoon cumin
1 cup shredded cheese
8 tortillas
Topping:
3 avocados
Directions:

Preheat oven to 425 degrees. Spray a 9x13 inch baking dish with cooking spray.
Combine chicken, corn (drain if using canned), green chiles (drained), Greek yogurt (or sour cream), 1/2 cup shredded cheese, enchilada sauce, and seasonings in a large mixing bowl.
Place the tortillas between two paper towels and heat in the microwave for 20 to 30 seconds to slightly soften.
To assemble, divide the filling between tortillas, fold edges inward over the top of filling and roll up. Place seam side down in the prepared baking dish. Top with remaining 1/2 cup cheese.
Bake in preheated oven for 20 minutes, or until cheese is melted and the sauce is bubbly around the edges. Serve with avocado and additional toppings of your choice if desired.
