FIRST OFF.... Don't swipe away when you see the first ingredient and you get turned off. I assure you that even those of you who had curdled cottage cheese will not know it's in here! Cottage cheese is an amazing source of protein that will keep you full for hours and help balance your insulin levels for hours of goodness. This is an easy recipe that can be modified in so many ways and even enjoyed before bed due to the high quality of slow-digesting protein that is essential for nighttime!
3/4 cup cottage cheese (look for lactose-free if needed)
2 tablespoons vanilla protein powder
1 tablespoon lemon juice (or water if you don't like lemon)
1 tablespoon peanut butter
1 tablespoon flaxseeds (or any nut)
1/4 cup frozen berries
Directions:
Add cottage cheese, protein powder, and lemon juice to your blender and whip until smooth. You can add a few drops of water to get it to your preferred consistency as this will differ based on the different types of cottage cheeses and your preferred texture.
In a separate mug add your blueberries. I like to warm mine up to create an alamode touch, but leaving them frozen will give you a more frozen treat.
Layer 1/2 of the whipped cottage cheese on tip of the blueberries, then add your peanut butter. Follow this by adding the rest of the cottage cheese mix and top with flaxseeds or your preferred nut.
If you feel that you need more sweetness you can add a touch of monk fruit or drizzle of agave.
This has been a nightly treat for me as it is healthy and filling! This can also be made with Greek Yogurt instead of Cottage Cheese as an alternative.
