Turkey BLT  Salad

  • 100 calories of croutons or choice of bread if making a sandwich per person

  • 4 strips turkey bacon, cooked and crumbled

  • 1 large tomato, chopped

  • 1⁄2 English cucumber, chopped

  • 8 ounces roast turkey from the deli, cut into cubes

  • 626g or 1 large head romaine lettuce, chopped

  • Low-fat ranch dressing

Directions:

  1. Combine the croutons with the bacon, tomato, cucumber, turkey, and romaine in a large salad bowl.

  2. Toss with just enough dressing to lightly coat the leaves. Serves 3-4
