Spinach Tomato Frittata

  • 8 large eggs

  • 1/4 cup milk of choice

  • 1/4 teaspoon salt

  • 1/4 teaspoon coarsely ground black pepper, divided

  • 1/2 small red onion, halved and thinly sliced

  • 1 -5 ounce container spinach leaves

  • 12 cherry tomatoes, halved

  • 1/4 cup shredded mozzarella cheese or DF cheese

Directions:

  1. Turn oven on at 375 while you prepare the egg mixture.

  2. Add eggs to bowl and scramble generously, adding milk and blend until smooth.

  3. Stir in the rest of the ingredients, besides the cheese.

  4. Spray a 9x9 baking dish and add egg mixture. Cover with foil and bake for 30 minutes until eggs set.

  5. Remove from oven and add optional cheese. Enjoy! Serves 4.
