Slow Cooker Beef Burritos


  • 2 lbsLean ground meat

  • 1 tsp Salt

  • 1 tsp Garlic powder

  • 1 tsp Paprika

  • 2 tsp Cumin

  • 1 tsp Chili powder

  • 1 (15 oz) can Refried beans

  • 1 (6 oz) canTomato paste

  • 1 (8 oz) jar Taco sauce

  • 1 cups Shredded cheese

  • 24 Tortillas ]


Optional Topping:

  • 1 cups Shredded cheese


Spray your crockpot with cooking spray. Add ground meat, and break up ground meat with a spatula. Sprinkle seasoning onto the meat and stir to combine. Cover and cook on high heat for 1 hour to "brown" the meat.  After one hour, stir and break up the meat until it is to your liking. Add taco sauce, beans, and tomato paste and stir. Return cover and finish cooking on high for 1-2 hours, low for 4-6 hours, or until cooked through and meat is tender. Once meat is cooked, stir in 1 cup shredded cheese and cover until cheese has melted, (about 5 minutes). Remove lid and stir to combine.

Warm tortillas in the microwave for about 1 minute to make them easier to roll, (this step is optional). Fill tortillas with meat mixture, rolling them up as you fill them. (Or you could use half of the meat for filling, and save the rest in a freezer container for making burritos at a later time. Just be sure to cool to room temperature before freezing. When ready to fill burritos, thaw meat mixture and fill burritos.) Enjoy with salsa or taco sauce if desired.

Serve burritos with cheese melted over the top if desired, (I do this either by placing the burritos in a baking pan and sprinkling with cheese. Then I bake for 10-15 minutes at 425 degrees, just until the cheese is melted. Or I pull two burritos at a time out of the fridge, place them on a plate, and microwave with a sprinkle of cheese until melted, about 1-2 minutes). Enjoy with salsa or taco sauce if desired.
