Ingredients
1/2 cup hoisin sauce
1/4 cup soy sauce
2 TBS rice vinegar
2 tsp sesame oil
1 TBS olive oil
2 lbs ground chicken
1 bunch scallions, thinly sliced
1 TBS ginger, grated
3 cloves garlic, grated
1 1/2 cups grated carrots
1 red bell pepper, minced
1/2 tsp red pepper flakes
2 cans chopped water chestnuts, drained
juice of one lime
2 heads lettuce
Instructions
Mix together hoisin sauce, soy sauce, rice vinegar and sesame oil. Set aside.
Add chicken to your slow cooker or Instant Pot along with the sauce from above, garlic, ginger, and white/light green parts of scallions. Mix together. Add in remaining ingredients, through the red pepper flakes. Mix together and cook on low for 4 hours, or IP for 20 minutes .
When done, stir in water chestnuts, green parts of scallions, and juice of lime. Serve rolled up in lettuce. YUM!
