Skinny Pizza Bombs

Pizza Bombs are the ultimate bite-sized comfort food! This recipe combines a light, protein-packed dough made with Greek yogurt and an egg for extra fluffiness, with a flavorful, high-protein filling of chicken, cottage cheese, and tomato paste. These little pockets of deliciousness are baked to golden perfection, making them a healthier alternative to traditional pizza rolls. Perfect for a family meal, party snack, or post-workout treat, they’re easy to make, fun to eat, and packed with flavor. Give these Pizza Bombs a try for a guilt-free indulgence that everyone will love!


Ingredients

For the Dough:

  • 2 cups non-fat Greek yogurt

  • 2.5 cups self-rising flour

  • 2 large eggs

  • 1 tsp baking soda

For the Stuffing:

  • 4 cups cooked chicken breast, shredded or finely chopped

  • 2 cups cottage cheese

  • 1/2 cup tomato paste

  • 2 tsp Italian seasoning

  • 1/2 tsp garlic powder

  • Salt and pepper to taste

For Topping:

  • 2 tbsp olive oil or cooking spray

  • Grated Parmesan cheese (optional)

  • A pinch of dried oregano or basil for garnish



Instructions

Step 1: Prepare the Dough

  1. In a large mixing bowl, whisk together the self-rising flour, baking soda, and salt (if using all-purpose flour).

  2. Add the Greek yogurt and the egg to the dry ingredients. Mix until a sticky dough forms.

  3. Knead the dough on a floured surface for 3-5 minutes until it becomes smooth and elastic. Add small amounts of flour if the dough is too sticky.

  4. Divide the dough into 16 equal portions and roll each piece into a ball or or large ball if making in a casserole (shown in photo).

Step 2: Prepare the Filling

  1. In a medium bowl, combine the shredded chicken, cottage cheese, tomato paste, Italian seasoning, garlic powder, salt, and pepper. Mix well.

  2. Taste the filling and adjust seasoning if needed.

Step 3: Assemble the Pizza Bombs

  1. Preheat your oven to 375°F (190°C) and line two baking sheets with parchment paper or silicone mats.

  2. Flatten each dough ball into a small circle (about 3-4 inches in diameter).OR one sheet for casserole dish.

  3. Place a generous spoonful of the chicken filling in the center of the circle.

  4. Carefully pull the edges of the dough up around the filling and pinch to seal. Roll gently into a smooth ball.

Step 4: Bake the Pizza Bombs

  1. Arrange the stuffed dough balls or casserole on the baking sheets, leaving space between them.

  2. Lightly brush each ball with olive oil or spray with cooking spray.

  3. Sprinkle with Parmesan cheese and a pinch of dried oregano or basil, if desired.

  4. Bake for 20-25 minutes, or until the pizza bombs are golden brown and cooked through.

Step 5: Serve

  • Let the pizza bombs cool for a few minutes before serving. They’re perfect as a snack, appetizer, or meal with a side salad. Enjoy!
