Reuben in a Bowl

This delicious recipe will honor St. Pattys Day, but can truly be enjoyed throughout the year. The flavors of a Reuben without the fat and calories in a traditional Reuben! This has become one of my favorite dishes as it is satisfying and delicious but also leaves you fullfilled!


Ingredients:

  • 1 lb sliced corned beef

  • 1 lb shredded coleslaw mix

  • 1 cup Swiss cheese

  • 2 tablespoon olive oil

  • 1 tablespoon caraway seeds

  • 1 tablespoon scallions

Russian Dressing

  • ½ cup Greek Yogurt

  • ¼ cup tomato paste

  • 4 oz small dill pickle

  • 1 tbsp sauerkraut

  • 1 tsp Worcestershire

  • 1 tsp Apple cider vinegar




Directions:

 

  1. Add olive oil in a pan and lightly toast half of the caraway seeds.

  2. Sliced corned beef into ½ inch ribbons before adding to the pan to sauté for 3-5 minutes covered

  3. Add coleslaw mix and cook for another 3-5 minutes covered.

  4. Stir mixture until combined turn off heat then top with Swiss cheese and cover for 3-5 minutes until cheese has melted

  5. Drizzle Russian dressing on top and garnish with scallions and remaining caraway seeds

  6. Serves 4
