This delicious recipe will honor St. Pattys Day, but can truly be enjoyed throughout the year. The flavors of a Reuben without the fat and calories in a traditional Reuben! This has become one of my favorite dishes as it is satisfying and delicious but also leaves you fullfilled!
Ingredients:
1 lb sliced corned beef
1 lb shredded coleslaw mix
1 cup Swiss cheese
2 tablespoon olive oil
1 tablespoon caraway seeds
1 tablespoon scallions
Russian Dressing
½ cup Greek Yogurt
¼ cup tomato paste
4 oz small dill pickle
1 tbsp sauerkraut
1 tsp Worcestershire
1 tsp Apple cider vinegar

Directions:
Add olive oil in a pan and lightly toast half of the caraway seeds.
Sliced corned beef into ½ inch ribbons before adding to the pan to sauté for 3-5 minutes covered
Add coleslaw mix and cook for another 3-5 minutes covered.
Stir mixture until combined turn off heat then top with Swiss cheese and cover for 3-5 minutes until cheese has melted
Drizzle Russian dressing on top and garnish with scallions and remaining caraway seeds
