2 1/2 cups Old fashioned oats
3/4 cup Protein powder [1]
3/4 cup Sweetener of choice
1 tsp Baking powder
1 tsp Baking soda
1 tsp Cinnamon
1/2 tsp Salt
4 Eggs
2 cups Zucchini
1 (15 oz) can Pumpkin puree
1/4 cup Maple syrup (sugar free works great)
Optional:
1/2 cup Chocolate chips
Preheat oven to 350 degrees. Spray a 9x13 inch baking dish with cooking spray.
Mix all of the dry ingredients in a mixing bowl, followed by the wet ingredients. Stir to combine. Pour batter into prepared baking pan and spread evenly. Sprinkle chocolate chips over the top if desired.
Bake for 55-60 minutes, or until a toothpick comes out clean. Let cool and cut into even size squares and enjoy!Refrigerate for up to 10 days, or freeze for up to 3 months.
