Ingredients
For the Dough
2 cups gluten-free flour (or reguar flour)
1 packet (2 1/4 tsp) active dry yeast
3/4 cup warm water (about 110°F)
1/2 tsp salt
For the Sauce
1 small can (6 oz) tomato paste
1 clove garlic, minced
1 tsp dried oregano
1/4 tsp salt
1/4 tsp black pepper
1 tsp lemon juice
1 tablespoon fresh basil
1/2 cup - 2/3 cup water
For the Toppings
1 cup cottage cheese
1 cup cooked chicken, shredded or diced
Use your own favorites
1/2 cup grated parmesan
Instructions
Step 1: Prepare the Dough
In a small bowl, dissolve the yeast in warm water. Let it sit for 5-10 minutes until it becomes frothy.
In a large mixing bowl, combine the gluten-free flour and salt.
Pour the yeast mixture into the flour and mix until a dough forms. Knead lightly on a floured surface until smooth.
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise for about 30 minutes.
Place dough ball in a bowl and cover with plastic wrap. Set asside to let it rise. I use "quick-rise" yeast so 30 miniutes will do, for fluffier dough let proof for 60-90 mins.
Step 2: Make the Sauce
In a bowl, mix the tomato paste with minced garlic, oregano, salt, pepper, and lemon juice.
Adjust water and seasoning to taste. We like ours thick so I dont use alot of water.
Step 3: Assemble the Pizza
Preheat your oven to 450°F (230°C). Place a pizza stone or baking sheet in the oven to heat up.
Roll out the dough on a sheet of parchment paper to your desired thickness. (this time I added it to a pie tin for a deeper dish pizza).
Spread the tomato sauce evenly over the dough.
Sprinkle the shredded chicken evenly across the pizza.
Dollop or spread the cottage cheese over the top.
Step 4: Bake the Pizza
Carefully transfer the parchment paper with the pizza onto the preheated pizza stone or baking sheet.
Bake for 12-15 minutes, or until the crust is golden and crisp, and the toppings are heated through.
Step 5: Serve and Enjoy
Slice and serve your homemade pizza hot, and enjoy the delightful combination of creamy cottage cheese, tender chicken, and the flavorful sauce!

The number of slices this pizza yields depends on the size and thickness of the dough you roll out. If you roll it out into a standard 12-inch (30 cm) round pizza, you can cut it into 6-8 slices, depending on how large or small you prefer each slice.
For a thinner crust or a rectangular pizza, the slices may vary, but 8 slices is typically a good serving estimate.
