Peanut Butter Chocolate Parfaits

A dinner party without dessert is like a musical without a third act: if there isn't a sweet little number to wrap up the show, it all feels incomplete. But I get it. The challenge of entertaining makes a store-bought dessert all the more tempting, but with a little planning, you can surprise your guests with a decadent last bite without much hassle at all. Make these mini chocolate pudding parfaits in advance and pull them out of the refrigerator when dinner is through. It's a win-win when everyone gets their own chocolate treat and you get to be where you belong — enjoying the party..



Ingredients :

  • 2 - 5.1 oz boxes of sugar-free chocolate instant pudding

  • 6 cups unsweetened almond milk

  • 1- 6oz container sugar-free Cool Whip

  • 1 cup protein powder (vanilla or chocolate)

  • 1/4 cup peanut butter

  • 1/4 cup powdered sugar



Instructions:

  1. Prepare your pudding by using the 6 cups of almond milk and two boxes of Jello powder. I prefer a mixer or high-power blender as almond milk needs that extra mixing motion to create the consistency needed.

  2. In a clear bowl or 9x12 dish, pour in half of the pudding leaving the remaining half to mix with the cool whip. You can also make individual party cups as shown in the photo.

  3. Add the cool whip to the remaining pudding and mix. Now add to the top of the pudding layer.

  4. In a separate bowl mix the peanut butter, protein powder, and powdered sugar until you get a crumbly consistency. Pour the powder mix on top of the cool whip/pudding mixture.

  5. For best results freeze for 1-2 hours to allow the pudding to congeal and enjoy!
