One Pan Stuffed Pepper Bake
Serves 4
Ingredients:
• 1 lb Lean ground meat • Onion
• 1 tbs Minced garlic
• Green bell pepper
• Red bell pepper
• 2 (15 oz) cans Diced tomatoes • 1 (4 oz) can Diced green chilies • 1 cup Quinoa
• 1 cup Chicken broth
• 1 teaspoon Chili powder
• 1/2 teaspoon Cumin
• 1/2 teaspoon Salt
• 1/4 teaspoon Pepper
Optional
• 1/4 cup Cilantro
• 1/4 cup Salsa
• 1/2 cup Shredded cheddar
Directions:
1. The estimated total time to make this recipe is 25-30 Minutes
2. Heat a large skillet over medium high heat. Spray with cooking spray. Add ground turkey,
onion and garlic. Cook until turkey has browned, about 3-5 minutes, crumbling meat as it
cooks.
3. Stir in peppers, tomatoes, green chiles, quinoa, chicken broth, and seasonings. Bring to
a boil; cover, then reduce heat to medium low and simmer until quinoa is cooked
through, about 15-20 minutes. Stir in cilantro and salsa if desired.
4. Remove from heat and top with cheeses. Cover until cheese has melted, about 2
minutes. Enjoy!
