These no-bake peanut butter pumpkin bites are perfect for an afternoon pick-me-up or a quick dessert. Creamy, sweet, Peanut Butter Pumpkin Bites are truffles made into cute little Fall pumpkins. Delicious and fun to make and eat! These Peanut Butter pumpkin bites last for almost 2 weeks in the fridge and are great for kid's lunches, after-school snacks, or for fall.
Ingredients:
2 tablespoons Agave
1/4 cup Pumpkin Puree
1/2 cup Water
1 cup PB2 (powdered peanut butter)*
1 cup oats
1/2 cup Lily's White Chocolate Chips
1/2 cup Flaxseeds or Chia Seeds
*real peanut butter can be used but omit the flaxseed or chia seeds to keep the fat portions balanced.
Directions:
In a bowl, add agave, pumpkin puree, seeds (if using), water, and mix.
To the same bowl, add 1 cup of PB2 and stir together.
Then, add your oats and chocolate chips. Mix until well combined.
I use a 2 tablespoon ice cream scoop to portion out 12 even balls on parchment paper.
Place in the fridge for 30 minutes to 1 hour & Enjoy!
