Leftover Thanksgiving Turkey Stew

Transform your Thanksgiving leftovers into a warm, hearty stew packed with rich flavors and creamy texture. This one-pot recipe is perfect for cozy days and makes excellent use of your leftover turkey!


Ingredients


Liquids:

  • Splash of white wine, sherry, or Marsala

  • 4 cups (1 liter) chicken broth or bouillon

Vegetables:

  • 1 large onion, roughly chopped

  • 2 stalks celery, sliced

  • 2 large carrots, cubed

  • 5 medium potatoes (white or sweet), peeled and quartered

Seasonings:

  • 1 tsp salt

  • 1 tsp garlic granules

  • 1 tsp dried thyme or parsley

  • ½ tsp black pepper

  • ½ tsp sweet paprika

Flavor Enhancers:

  • 1 tbsp Dijon mustard

  • 2 tsp tomato paste

  • 1 tbsp soy sauce

Protein & Creaminess:

  • 1 pound (450g) turkey meat, cubed or shredded

  • 1 tbsp cornstarch (mixed with water)

  • 1 cup Greek yogurt

Garnish:

  • 3 tbsp freshly grated Parmesan

  • 3 tbsp flat-leaf parsley, chopped



Instructions

  1. Sauté the Vegetables:

    • In a large pot over medium heat, melt the butter.

    • Add the onion, celery, and carrots. Cook for about 5 minutes until softened.

  2. Deglaze with Wine:

    • Pour in the splash of wine (white wine, sherry, or Marsala) to deglaze the pot, scraping up any browned bits. Let it simmer for 2 minutes.

  3. Cook the Base:

    • Add the potatoes, salt, garlic granules, thyme or parsley, black pepper, and paprika. Stir well to coat the vegetables.

    • Stir in the Dijon mustard, tomato paste, and soy sauce for a flavor-packed base.

  4. Simmer the Stew:

    • Pour in the chicken broth and bring everything to a boil. Reduce the heat to low and let the stew simmer for 20 minutes, or until the potatoes are tender.

  5. Add the Turkey:

    • Stir in the turkey meat and cook for an additional 10 minutes to heat through.

  6. Thicken the Stew:

    • In a small bowl, mix the cornstarch with 2 tablespoons of cold water to make a slurry. Stir it into the pot and simmer for 3-5 minutes until the stew thickens.

  7. Finish with Creaminess:

    • Turn off the heat. Stir in the Greek yogurt and Parmesan until the stew becomes rich and creamy.

  8. Garnish and Serve:

    • Ladle the stew into bowls and garnish with chopped flat-leaf parsley. Serve warm with crusty bread or crackers for a comforting meal.
