4 cups (1 liter) chicken broth or bouillon

Instructions
Sauté the Vegetables:
In a large pot over medium heat, melt the butter.
Add the onion, celery, and carrots. Cook for about 5 minutes until softened.
Deglaze with Wine:
Pour in the splash of wine (white wine, sherry, or Marsala) to deglaze the pot, scraping up any browned bits. Let it simmer for 2 minutes.
Cook the Base:
Add the potatoes, salt, garlic granules, thyme or parsley, black pepper, and paprika. Stir well to coat the vegetables.
Stir in the Dijon mustard, tomato paste, and soy sauce for a flavor-packed base.
