Irene’s Mid-day Protein Fix

Ingredients:
3/4 cup cottage cheese
1/4 cup canned white kidney beans (you can use any bean)
1 tablespoon olive oil
Optional
Fresh basil
Directions:
Trust me on this. It truly is delicious.
You can switch up the beans or add extra veggies. I like adding canned artichoke hearts and olives.
This will work with Greek Yogurt but comes out runny.
If you are not a cottage cheese lover, start with 4% or large curd. The Costco brand is my favorite.
Notes
Use lactose free cottage cheese if needed.
It is suggested to do cottage cheese meals every other day if you experience bloating from overconsumption of cottage cheese dishes. Some individuals will find that their digestive systems need to space out milk or casein products to prevent issues.
