Hearty Hamburger Helper

Homemade Hamburger Helper is the ultimate comfort food, especially when you're looking for a hearty, satisfying meal that's easy to make. This recipe takes the classic, but with a homemade twist that skips the boxed mix while keeping that rich, creamy sauce, perfectly seasoned ground beef, and tender pasta that makes it a family favorite. Plus, you can add extra veggies, swap in whole-grain pasta, or even sneak in a bit of spice to make it your own!

Ingredients:

  • 1.5 lb lean ground meat

  • 1/4 cup ketchup

  • 1 teaspoon mustard

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • 1 teaspoon salt

  • 1/4 teaspoon pepper

  • 6 oz pasta

  • 3 1/2 cup chicken broth

  • 1 cup Greek yogurt

  • 1 cup shredded cheddar

Directions:

  1. Spray a large skillet with cooking spray. Cook the ground meat in the skillet over medium high heat until no longer pink, breaking it up as it cooks.

  2. Reduce heat to low and add the ketchup, mustard, seasonings, pasta and broth to the pan and stir well to combine.

  3. Cover and simmer for 12-15 minutes until pasta is al dente. (Note: If there is remaining chicken broth in the pan after the pasta has cooked, drain excess liquid at this time.)

  4. Turn off the heat and stir in the Greek yogurt and one cup cheese until combined. Top with the rest of the cheese and place the pan under the oven broiler for 1-3 minutes, or until the cheese is melted. (You could also pour everything into a baking dish, top with cheese, and broil if you prefer to serve in a baking dish.) Enjoy!
