This has truly become one of my "Omg-I-don't-have-a-dinner-plan" meals. Simply keep the ingredients needed on hand and you can whip this out at anytime!
Ingredients:
4 chicken breasts of 1lb chicken
4 eggs
4 cups cooked rice
1 cup frozen peas
1 cup frozen corn
1 tablespoon sesame or olive oil
1/4 cup liquid aminos (or 2 tablespoons soy sauce)
Optional:
Add additional veggies such as carrots, celery and onions
Sesame seeds for topping
Directions;
Cook your rice according to the instructions on the box. Minute rice or 90-second microwave rice works! 1 uncooked cup will give you 4 cooked cups! I love my rice-cooker or instant pot for this!
Cube up your chicken into bite-sized pieces and brown on a skillet using the oil of choice. Add any additional veggies you have chosen to add along with the frozen peas and corn. These will cook along with the chicken.
After 8-10 minutes the chicken should be mostly cooked and definitely browning. Add your 4 cups of white rice and 4 eggs. Cover this mixture if possible until eggs start cooking
Using a spatula, dice up the cooked egg and mix the entire skillet together giving it a fried rice appearance.
Add sesame seeds if desired and serve. Makes 6 servings.
