Banana bread but with a spin of peanut butter and greek yogurt.. YUM! Coming from a banana bread lover, this certainly hits the spot and also helps you hit your protein requirements for the day. Make this for your next family function and everyone will be asking for it again and again!
Ingredients:
1/2 cup peanut butter
28 g ground flaxseeds
1 1/2 cup self-rising flour
2 large, egg
2 1/2 cups greek yogurt
64 grams vanilla whey protein powder
Directions:
Preheat your oven to 350 degrees. Spray a 9 by 5-inch bread pan with olive oil
Combine the protein powder and flour in a large bowl.
Next add the yogurt, followed by the eggs. Next, mix in the flaxseeds and then stir in the peanut butter.
Pour the mixture into the pan.
Bake for 40 to 45 minutes or until you are able to stick a toothpick in the middle and have it come out with no moist batter and the edges are golden brown.
Allow the bread to cool in the pan for a few minutes and then remove it to a cooling rack to allow it cool completely.
Seal in an air-tight container, and enjoy within two days.
