GRAB-N-GO EGG WRAPS

Makes 3 servings

2 wraps per serving

Ingredients:

  • 5 corn tortillas

  • 2 1/2 cups spinach leaves (about 1/2 cup per wrap or the amount you prefer)

  • 6 slices low-sodium ham

  • 3 slices dill havarti or cheese of choice

  • 6 hard-boiled eggs, sliced

  • 1.5 tablespoon olive oil divided



Directions:

1. To make each wrap, layer the tortilla with spinach leaves, overlapping if necessary.

2. Top spinach leaves with a slice of havarti, followed by a 1/2 slice of ham.

3. Add slices of hard-boiled eggs on top of ham.

4. Roll wrap and secure by wrapping in plastic wrap. Drizzle olive oil on each one for healthy fat or use olive oil on the skillet to brown tortillas. Store in the refrigerator for no more than 5 days.
