A PERFECT yummy fix to add as a side for soups! Have always been a fan of cornbread/muffins and thought I would share this recipe! Make this for friends and family and they will NEVER want any other recipe!
Ingredients:
1 box organic corn muffin mix
1 egg
1/3 cup greek yogurt
1 cup almond milk
1 cup cauliflower rice
1/2 cup shredded cheddar
Optional Topping:
1/2 cup shredded cheddar
Makes 12 muffins Each muffin can count as a carb portion for a meal if following the Getufit meal plan.
Directions:
Preheat the oven to 400 degrees. Line 12 muffin cups with parchment paper liners, or spray with cooking spray.
Place egg, Greek yogurt (or applesauce), milk, and cauliflower rice in a blender or food processor. Blend until smooth. Add cheese and corn muffin mix and stir to combine everything together.
Pour batter into the prepared muffin tins, dividing evenly amongst the 12 tins. Sprinkle optional cheese on top if desired. Bake for 15-18 minutes, or until the toothpick comes out clean. Enjoy!
