This Egg White Oatmeal Recipe is an easy, high protein breakfast you'll love. The oatmeal turns out thick and fluffy, and can be dressed a million delicious ways! Made with only a few simple ingredients, this is the perfect go-to breakfast, and it's great for prepping on a busy morning! As I teach members of my nutritional program the importance of keeping all of their meals in balance.. this morning treat hits all the right nutrients!
Ingredients
1/2 cups uncooked Oats
1/2 tsp Cinnamon
1 tablespoon flaxseeds
1/4 cup frozen berries
1 cups Milk of choice
1/4 cups Egg whites
Directions
Stovetop:
1. Add oats, cinnamon, and sweetener to a medium size pot. Add milk (or water) and stir to combine. Heat over medium-high heat for 6-7 minutes or until all the liquid has been absorbed. Be sure to stir the oats several times while cooking. 2. Add egg whites (or heated egg) into the oats and stir/whisk constantly. Stirring will keep the egg whites from cooking/scrambling and they will turn into a thick, fluffy consistency instead. This should take 1-2 minutes. Once all the liquid is absorbed and the oatmeal is cooked through, place in a bowl.
3. Add fruit and flaxseeds and enjoy.
Microwave:
1. Add oats, cinnamon, and sweetener to a microwave safe bowl. Add milk (or water) and stir to combine. Microwave for 2 minutes, then remove and stir again. You may need to stop the microwave occasionally and stir to prevent overflow. 2. Add egg whites (or beaten egg) slowly, while whisking constantly. Stirring will keep the egg whites from cooking/scrambling and they will turn into a thick, fluffy consistency instead. This should take about 1 minute. 3. Return the bowl to the microwave and microwave an additional 2 minutes. You may need to stop the microwave occasionally and stir to prevent overflow .
4. Once all the liquid is absorbed and the oatmeal is cooked through, add your berries and flaxseeds and enjoy. Serves 1
Use different fruit or nuts instead of flaxseeds if desired.
