Ingredients:
6 large eggs 🥚
1 cup egg whites 🥚
1 cup low-fat cottage cheese 🧀
1/2 cup shredded cheddar cheese (optional for added flavor) 🧀
1/2 tsp salt 🧂
1/2 tsp black pepper 🌶️
1/2 tsp garlic powder 🧄
1/4 cup diced veggies (optional: bell peppers, spinach, mushrooms) 🌱
Directions:
Preheat your oven to 350°F (175°C). Spray a 12-cup muffin tin with non-stick cooking spray or line with silicone baking cups.
In a blender, combine the eggs, egg whites, cottage cheese, salt, pepper, and garlic powder. Blend until smooth and creamy.
Stir in your diced veggies and shredded cheddar cheese (if using) into the egg mixture.
Pour the mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
Bake for 20-25 minutes, or until the egg bites are set and slightly golden on top.
