Double Chocolate Zucchini Muffins
Breakfast/Minimeal/Dessert
Makes 12 muffins
Ingredients:
1 1/2 cup Oat flour
1/2 cup Protein powder
1/2 cup Cocoa powder
1 1/2 teaspoon Baking powder
1/2 teaspoon Baking soda
1/2 teaspoon Salt
1 Egg
1 cup Greek yogurt
1/3 cup Maple syrup
2 small Zucchini
1/2 cup Chocolate chip
Directions:
Preheat oven to 350 degrees. Line a muffin tin with parchment paper liners (or silicone liners sprayed with cooking spray for easiest release).
Mix the dry ingredients together in a mixing bowl until combined. Add the wet ingredients and stir to combine. Grate zucchini and add to the bowl along with the chocolate chips. Stir until everything is combined.
Using a measuring cup or large ice cream scoop, scoop even amounts of batter into each muffin tin. Bake 20-25 minutes, or until a toothpick comes out clean. Let cool and enjoy!
