Ingredients
1 cup onions, chopped
½ teaspoon salt
¼ cup gin, or vodka – optional
2 cups plain whole milk Greek yogurt, don’t use fat-free here
2 tablespoons olive oil
½ cup chopped martini olives, plus more for garnish
2 teaspoons martini olive brine
½ teaspoon fresh cracked black pepper
1 teaspoon lemon zest
¼ cup Gorgonzola cheese, or blue cheese, plus optional more for topping
Instructions
Add olive oil to a small saute over medium heat; add onions & salt. Saute until browned but still with a bite. Add alcohol of your choice and cook out until almost dry. Set aside to cool.
In a medium bowl combine Greek yogurt, olives, olive brine, black pepper & sauteed onions, add gorgonzola.
Spoon dip into a dish; top with lemon zest and olives.
Serve with your favorite cracker or chip!
