You can easily customize this soup for what your family likes and what type of pizza you normally enjoy. The crock pot does all the work for the best meal!
Ingredients
1 1/2 lb Chicken
2 cups water
1 medium Onion (optional)
1 (12 oz) bag Cauliflower rice
1 (28 oz) can Crushed tomatoes
1 (15 oz) can Pizza sauce
2 medium Bell peppers
2 medium Zucchini
1/2 teaspoon Garlic powder
1 teaspoon Oregano
1/2 teaspoon Salt
1/4 cup Parmesan cheese (optional)
add additional veggies of choice
Instructions:
Dice veggies into bite size pieces. Add everything except for the parmesan cheese to your crockpot. If using ground meat or sausage rather than chicken, cook meat in sauté pan to brown and break up meat before adding to crockpot.
Cover and set crockpot to low for 8-12 hours, or high for 4-6 hours. Instant Pot for 25 minutes with slow release. Remove chicken from crockpot after cooking and shred with two forks. Add back to the crockpot, along with parmesan cheese, (leave cheese out to make this soup dairy free), and stir to combine. Enjoy with additional parmesan cheese on top if desired.
