Seasoned Chicken:
1 lb Boneless skinless chicken breasts (about 3 large breasts)
1 (4 oz) can Green chilies
1/2 Medium red onion, finely chopped
1/4 cup Salsa of choice
1/4 tsp Salt
1/2 tsp Cumin
1/2 tsp Chili powder
1 Lime (just the juice)
Chips/Toppings:
1 bag Whole grain chips of choice [1]
1 (15 oz) can Fat free refried beans, warmed
1 cup 2 % Shredded cheese of choice
1 Large roma tomato, diced
1/2 cup Corn
1/2 cupBlack beans
Place everything for the seasoned chicken in the crockpot. Cover and cook for 4 hours on high or 6-8 hours on low. After cooking, shred chicken breasts with two forks. Remove shredded chicken and discard the extra liquid in the crockpot.
Place chips in a baking dish or oven safe skillet and top with refried beans (if using), chicken and cheese. Place under ovens broiler for 1-3 minutes, or until cheese melts and top with tomatoes, corn, black beans, and optional toppings if desired. Enjoy! Serves 6
