Creamy Tomato Basil Crockpot Chicken
Serves 4
Ingredients:
• 1 (14 oz) can Diced tomato
• 1 cup Marinara sauce
• 1/2 cup Oat Milk
• 2 tbs Arrowroot powder
• 1/4 cup olive oil
• 1 tbs Minced garlic
• 1 teaspoon Salt
• 1/2 teaspoon Dried basil
• 1/4 teaspoon Pepper
• 1 1/2 lb Chicken breast
•2 tbs Fresh basil

Directions:
1. Add diced tomatoes and marinara sauce to your slow cooker.
2. Whisk together oat milk and corn starch and add to the slow cooker. Stir in garlic, salt, oil, dried basil, and pepper. Add chicken breasts and cover in the sauce. Cook on low for 6-8 hours, or high 3-4 hours, until chicken is cooked through and tender.
3. Stir in fresh basil and serve over pasta, brown rice, or with a salad and veggie
