Ingredients:
1 lb boneless, skinless chicken breasts
6 cups chicken broth
2 tablespoons olive oil
1 cup wild rice
2 carrots, diced
2 celery stalks, diced
1 onion, diced
1 cup Greek Yogurt
Salt and pepper, to taste
Directions:
Add olive oil, chicken, broth, wild rice, carrots, celery, and onion to the Crockpot.
Cook on low for 6-7 hours or high for 3-4 hours.
Shred the chicken and stir in the yogurt
Cook for another 10-15 minutes, then serve.
