Creamy Cauliflour Casserole

Ingredients

  • 1 cauliflower head

  • 4 tablespoons olive oil divided

  • 1 teaspoon paprika

  • Salt and pepper

  • 2 tablespoons butter

  • 2 tablespoons flour

  • 2 cups cottage cheese

  • 1 cups panko breadcrumbs (use gf if needed)

  • ½ cup parmesan cheese shredded

  • 1 teaspoon paprika

  • Salt and pepper


Instructions

  1. Preheat the oven to 180ºC (350°F).

  2. Cut the cauliflower into florets. Place it on a baking tray. Brush with olive oil, paprika, salt and pepper. Roast the cauliflower for 20 minutes, or until it starts to brown.

  3. While you are roasting the cauliflower, mix 2 tablespoons olive oil and flour in a pot and cook for a couple of minutes.

  4. Blend cottage cheese to make smooth. Add the cottage cheese, salt, and pepper and cook until smooth. Add the flour mixture and blend until smooth.

  5. Mix breadcrumbs, vegetarian parmesan cheese, paprika, salt, and pepper in a bowl.

  6. Top the cauliflower with the sauce (step 4) and then with the panko mixture. Bake for 15 more minutes, or until golden brown.

  7. Serve and enjoy!
