DRESSING: - mix together • 180 grams or 6 ounces plain Greek Yogurt or yogurt alternative • 30 grams or 2 tablespoons avocado mayonnaise • 40 grams or 2 tablespoons agave • 1/2 lemon, juiced • Salt & pepper
SALAD: - mix all together and top with dressing
• 1 pound cooked chicken diced • 100 grams or 1 cup sliced red grapes • 200 grams or 1 cup blueberries • 2 celery stalks, sliced • 65 grams or 1/2 cup chopped pecans
Directions:
Mix all ingredients for the salad together until combined. In a small bowl mix dressing ingredients until smooth. Combine the two and toss gently until the dressing covers all of the ingredients. Yield 6 total servings - make ahead for the whole week! Serve on spinach, lettuce, pita, or tortilla.
