Ingredients:


Batter:

  • 1 1/2 cup almond flour

  • 1 cup Cottage Cheese

  • 1/2 cup maple syrup

  • 4 eggs

  • 1/2 teaspoon baking powder

  • 1/2 teaspoon baking soda

  • 1/4 teaspoon salt


Filling:

  • 1/4 cup maple syrup

  • 2 tablespoon ground cinnamon

  • 2 tablespoon no sugar added applesauce


Glaze:

  • 1/2 cup Greek Yogurt

  • 1/4 cup vanilla protein powder

  • 1/4 cup no sugar added applesauce

  • 1/2 teaspoon vanilla extract




Instructions

  1. Preheat the Oven

    • Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly grease with cooking spray.

  2. Prepare the Batter

    • In a large mixing bowl, whisk together the almond flour, baking powder, baking soda, and salt.

    • In a blender or separate bowl, combine the cottage cheese, maple syrup, and eggs. Blend or whisk until smooth.

    • Gradually fold the wet mixture into the dry ingredients until just combined. Avoid overmixing.

  3. Make the Filling

    • In a small bowl, mix the maple syrup, cinnamon, and applesauce to create a thick, spiced filling.

  4. Assemble the Muffins

    • Scoop a tablespoon of batter into each muffin cup, spreading it evenly to cover the bottom.

    • Add about a teaspoon of the filling on top of the batter in each cup.

    • Cover the filling with another tablespoon of batter, ensuring the filling is encased in the center.

  5. Bake the Muffins

    • Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.

  6. Prepare the Glaze

    • While the muffins bake, whisk together the Greek yogurt, vanilla protein powder, applesauce, and vanilla extract in a small bowl until smooth. Adjust consistency with a teaspoon of water if needed.

  7. Cool and Glaze

    • Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

    • Drizzle the glaze over the muffins before serving for a sweet, creamy finish.


Tips for Storage

  • Store in an airtight container in the refrigerator for up to 5 days.

  • For longer storage, freeze the muffins without the glaze. Thaw and add the glaze just before serving.
