Copycat Starbucks Cheesy Bacon Egg Bites

Makes 12 bites
Ingredients:
2 slices Bacon
1 (8 oz) carton Egg white
4 eggs
1 cup Cottage cheese
1/4 teaspoon Salt
1/8 teaspoon Pepper
1/2 cup Shredded cheese

Preheat the oven to 300 degrees. Spray a muffin pan generously with nonstick cooking spray.
Heat a small nonstick skillet over medium-high heat. Cook the bacon until crisp (about 5 to 6 minutes), flipping as needed. Transfer the bacon to a paper towel-lined plate. (You could also bake the bacon or cook it in the air fryer until crispy). Once cooled, crumble the pieces.
In a blender, combine the egg whites, cottage cheese, salt, and pepper and eggs and blend until completely smooth (about 30 to 45 seconds).
Pour the egg mixture evenly into the prepared muffin pan, filling each well about three-quarters full. Divide the cheese and bacon evenly over the egg bites. Stir some into the batter in the cups so it is not all floating on top. Bake for 30-35 minutes on the middle rack, or until the eggs are set.
Remove the egg bites from the oven and let rest in the pan for about 20 minutes. Use a small spoon to loosen the egg bites from the edges of the pan and carefully lift them out onto a plate. Serve warm.
