Pumpkin season is not over YALL!!! Who would not want a GETUFIT approved version of Dunkin's pumpkin munchkins!! These munchkins have more of a crusty outside with a cakey inside! Perfect paired with your coffee in the mornings!
Ingredients:
1 cup oat flour
1/2 cup pumpkin puree
32g vanilla protein powder
1/4 cup melted coconut oil
1 teaspoon vanilla
2 teaspoon pumpkin pie spice
1/2 teaspoon baking soda
pinch of salt
Directions:
Mix all ingredients in a bowl.
Refrigerate for 15-30 minutes.
Preheat the oven to 350 degrees F and grease a donut hole pan
Use a cookie scoop to divide the dough into 18-24 pieces depending on the size you would like. A batch of 24 yields 45 calories per bite. A batch of 18 yields 80 calories per bite.
Roll into balls and coat with pumpkin pie spice! Bake for 18 minutes and enjoy!
