On these freezing cold winter days, nothing feels better than the warmth of a home cooked meal. There's something to be said about the smell of your house when you have something in the oven or the slow cooker... or in today's case the Instant Pot and Air Fryer.
Whether you are living in the sub-zero temps of the midwest or the warmth of sunnier skies, these two Getufit favorites will surely become a staple in your household!
Getufit Savory Cheddar Muffins
Ingredients
2 cups oat flour or all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon pepper
1 cup almond milk (or any milk)
3 eggs
1 teaspoon vinegar
1/2 cup Greek yogurt (or applesauce)
1/3 cup shredded cheddar (omit for dairy free)
1 tablespoon maple syrup
Add ins: A total of two cups of the following can be added for a refreshing variety.
Ground beef
Turkey sausage
Diced ham or turkey
Diced onions, peppers, or any veggie as long as all the water has been drained out to avoid added moisture.
Directions:
Preheat oven to 375 degrees. Spray a 12 count muffin pan with nonstick cooking spray.
In large bowl whisk together the dry ingredients. In small bowl whisk together milk, eggs, vinegar, syrup, and yogurt and set aside.
In large skillet brown turkey sausage over medium high heat, breaking it up as it cooks.
Pour milk mixture into oat flour mixture. Add any add-ons and cheese. Mix just until batter is combined. Divide evenly in muffin pan. (You can fill to the top as they don’t rise much). Bake until golden brown; about 25-30 minutes.
Makes 12 muffins.
