  • Frozen hash brown potatoes: 2 cups

  • Pepperjack cheese: 1/4 cup, shredded

  • Cooked ham: 1 cup, diced

  • Green onions: 1/4 cup, chopped

  • Eggs: 8, beaten

  • Cottage Cheese - 1 cup

  • Greek Yogurt 1 1/2 cups

  • Ground black pepper: 1/4 teaspoon

  • Salt: 1/8 teaspoon

Step-by-Step Cooking Instructions

  1. Prepare the Baking Dish: Start by preheating your oven to 350 degrees F (175 degrees C). Grease a 2-quart baking dish to ensure nothing sticks.

  2. Layer the Base: Arrange the hash brown potatoes evenly at the bottom of your prepared dish. Sprinkle the shredded pepperjack cheese, diced ham, and chopped green onions over the potatoes. This layering ensures each bite is packed with flavor.

  3. Mix the Egg Mixture: In a medium bowl, whisk together the beaten eggs, cottage cheese (you can blend it or leave it whole), black pepper, and salt until well combined. This mixture will bind the ingredients together and add a creamy texture to the casserole.
