Ingredients:
Muffins:
3/4 cup Coconut flour
1/2 cup Protein powder
3/4 cup Sweetener of choice
1 tsp Cinnamon
1/2 tsp Salt
1 tsp Baking soda
1 tsp Baking powder
4 eggs
3/4 cup Applesauce
1/2 cup Maple syrup
1 tsp White vinegar
Coating:
1/4 cup Sweetener of choice
1 tsp Cinnamon
Directions:
I use Lakanto Monk fruit maple syrup. You can also use honey.
The estimated total time to make this recipe is 25-30 Minutes
Preheat oven to 350 degrees. Spray muffin tin with non-stick cooking spray, or line with parchment paper muffin liners. Place all of the dry ingredients in a bowl, and mix until mixture is smooth. Add wet ingredients and continue to stir until combined. Divide mixture evenly between 12 muffin tins. Bake for 18-23 minutes for oat flour version, or 25-28 minutes for the grain-free version, or until toothpick comes out clean.
Remove from the oven and let cool. Once cooled, mix sweetener and cinnamon in a small bowl and roll muffins in mixture until coated.
Makes 12 cakes
