Chipotle Chicken Avocado Melt

  • 3-4 oz chicken

  • 1/3 diced avocado

  • 5 grams in weight of corn (2 tablespoons)

  • vine ripe tomato (optional)

  • 32 grams light Chipotle dressing (2 tablespoons)

Flex Option:

  1. Either bed of greens for salad or choice of bread

  2. Tortilla slices or croutons for salad topping as carb - yield 80 calories.

Directions:

  1. Place on slices of toast of choice and brown with one laughing cow wedge.

Salad option: Top mixture on a bed of greens and add 80 calories of crushed tortilla chips, browned corn tortilla, or croutons.
