It is a salad most preferred for family functions or potlucks. That is because it is easy to love and not much likely to have any side effects. It also requires less effort to put together. That is why it is referred to as a quick salad recipe.
Ingredients:
1 (16 oz) bag coleslaw mix
1 (3 oz) pkg dry ramen noodles (gluten-free available)
1 bunch of green onions
1 cup sliced almonds
1 cup sunflower seeds
1 cup mandarin orange slices
2 lbs protein of choice- precooked (chicken, fish, lean pork, beef, beans or tofu)
Dressing:
1/3 cup avocado oil
1/3 cup white wine vinegar
1/4 cup sweetener of choice
1/2 tsp salt
1/4 tsp pepper
Directions:
Slice the onions and crumble the dry noodles.
In a large mixing bowl, combine the coleslaw, broken up dry pasta noodles, sliced green onions, sliced almonds, and sunflower seeds. Toss to combine.
Combine salt and pepper in a mason jar or container with a lid. Shake to mix.
When ready to serve, pour the dressing over the salad and toss to combine. Add the mandarins last and gently toss to combine. Serve immediately.
Add your protein to complete the balance. Chicken or tofu on this salad is fantastic.
