Who doesn’t like spinach artichoke dip?! A dream come true! This recipe is a full meal of all this goodness! Each serving is packed with over 25 grams of protein which will satisfy your urge for something warm and creamy!
Ingredients:
4 cups fresh spinach
2 tablespoons olive oil
1 cup Greek Yogurt
1 cup cottage cheese blended
1 tablespoon minced garlic
1/2 cup mozzarella cheese
1/2 cup Parmesan cheese
1-8oz can artichokes
1.5 lbs cooked chicken diced
1 teaspoon salt
Juice of 1 lemon
1 tablespoon lemon zest

Directions:
1.Prepare the Spinach
Heat olive oil in a skillet over medium heat.
Add the baby spinach and sauté until wilted, about 2–3 minutes.
Let the spinach cool, then chop it roughly and squeeze out any excess moisture using a paper towel.
2. Mix the Base
In a large mixing bowl, combine Greek yogurt, cottage cheese, minced garlic, parmesan cheese, mozzarella cheese, and salt.
Stir until the mixture is smooth and evenly combined.
3. Add Spinach and Artichokes and cooked chicken
Fold in the chopped spinach, artichoke hearts, lemon zest, and lemon juice.
Mix gently but thoroughly to ensure even distribution.
4. Transfer to Baking Dish
Spray an oven-safe dish with non-stick spray.
Pour the dip mixture into the dish and spread it evenly.
5. Bake and Broil
Preheat your oven to 425°F (220°C).
Bake the dip for 20 minutes.
For a golden-brown top, broil for an additional 1–2 minutes.
6. Serve Warm
Serve immediately - enjoy!
