Chicken Caesar Lettuce Wraps
Serves 8
Ingredients:
• 1 1/2 lb Chicken breast • 1 cup Chicken broth Caesar dressing:
• 1 cup Greek yogurt
• 1/2 cup olive oil
• 1/2 cup Parmesan cheese
• 1 tbs Worcestershire sauce
• 1 teaspoon Garlic powder
• 1/2 teaspoon Onion powder
• 1/2 teaspoon Mustard
• 1 1/2 tbs Lemon juice
• 1 tbs White wine vinegar
• 1/2 teaspoon Salt and pepper
Lettuce wraps:
• 8 leaves Romaine lettuce
Directions:
1. The estimated total time to make this recipe is 3-6 Hours
2. Prepare Chicken in the
Crockpot: Place the chicken
breasts in a slow cooker with
chicken broth (or water).
Cover and place on high heat
for about 3 hours, or on low
heat for 6 hours or until
chicken is cooked through
and is tender enough that it
can be easily shredded.
Remove the chicken from the
slower cooker and pull
chicken apart with two forks,
until it is shredded to your
liking. (If using pre-cooked
chicken in this recipe, you can
skip this step. You can also do
this well in advance and keep the shredded chicken in your fridge for up to 7 days.)
3. Prepare the Dressing: Place all of the ingredients for the dressing in a small bowl, and whisk together, or puree a blender to make it really smooth and creamy.
4. Put it Together: Toss the shredded chicken in the Caesar dressing, and place on romaine lettuce leaves, dividing chicken mixture into 8 servings (about 1/4 heaping cup per lettuce wrap). Or divide chicken mixture between 8 whole grain tortillas or buns if desired (about 1/2 heaping cup chicken mixture over each sandwich). Top with additional parmesan cheese and black pepper if desired. Enjoy
