Authentic Mexican chicken soup Caldo de Pollo will surprise with its deep comforting flavor and will remind you of your moms soup. Sopa de Pollo is one of the best soup i ever tried!
Ingredients:
5 chicken thighs you can use chicken breast
1 large carrot sliced
2 tablespoons olive oil
2 zucchinis sliced
4 cups water
2 cups chicken bone broth
2 corn cut in thirds
1 onion sliced
salt and pepper to taste
1 bay leaf

Directions:
Wash chicken thighs and put them in to a crockpot or Instant Pot (i used frozen chicken). Add water and broth.
Add the rest of the ingredients in to the broth except zucchinis. Pressure cook for 20 minutes or crockpot for 6 hours on low
Add zucchinis and cook for 10 minutes over slow heat.
Garnish soup with avocado, sour cream, cilantro, lime, green onions.
Serves 6
