This Buffalo Chicken Cauliflower Bake is a bold, flavor-loaded dish that combines tender shredded chicken with a creamy buffalo sauce and a touch of heat. It’s perfect for weeknight dinners, meal prep, or feeding a crowd—comfort food with a healthy twist that satisfies every time!
Ingredients:
3 cups cottage cheese
1/2 cup feta cheese
1/2 cup buffalo sauce
2 eggs
1 teaspoon garlic powder
1 teaspoon onion powder
2 cup cooked shredded chicken
1 (10 oz) bag cauliflower rice
1/2 cup shredded cheddar cheese
Optional jalapeños sliced

Directions:
Preheat oven to 425 degrees. Spray a 9x13 inch baking dish with cooking spray.
Blend cottage cheese, feta cheese, buffalo sauce, eggs, and seasonings until smooth in a blender. Pour mixture into a bowl and add cooked chicken, thawed cauliflower rice, and stir to combine. Spread out evenly in baking dish. Top with shredded cheddar cheese. Add sliced jalapeños if you like an extra kick!
