Blender Blueberry Pancakes

These Blender Blueberry Pancakes are the perfect mix of convenience and wholesome goodness. Made with simple, clean ingredients and blended to a smooth batter in seconds, they’re fluffy, naturally sweet, and bursting with juicy blueberries in every bite. Whether you’re meal prepping for the week or whipping up a quick weekend breakfast, these pancakes are a delicious, no-fuss option the whole family will love.

Ingredients:

  • 2 large eggs

  • 1/2 cup liquid egg white

  • 1 cup old-fashioned oats

  • 1 cup Greek Yogurt

  • 1/2 cup protein powder

  • 1 teaspoon baking powder

  • 1/4 teaspoon salt

  • 1 teaspoon ground cinnamon

  • 1 cup fresh blueberry




Directions:

  1. Add all ingredients except the blueberries to your blender and blend until smooth.

  2. Heat your pan or griddle over medium heat and spray with cooking spray. Pour the batter in 1/4 cup amounts onto the hot griddle, then top with about a tbs of blueberries.

  3. When pancakes bubble, flip and cook the other side until golden brown (about 2 minutes on each side). Continue to cook until the batter is gone (you should get 12 total when using 1/4 cup batter per pancake), spraying pan with cooking spray between batches. Enjoy with your favorite pancake toppings.

Makes 12 pancakes- 4 pancakes per serving
