Blender Blueberry Pancakes

These Blender Blueberry Pancakes are the perfect mix of convenience and wholesome goodness. Made with simple, clean ingredients and blended to a smooth batter in seconds, they’re fluffy, naturally sweet, and bursting with juicy blueberries in every bite. Whether you’re meal prepping for the week or whipping up a quick weekend breakfast, these pancakes are a delicious, no-fuss option the whole family will love.
Ingredients:
2 large eggs
1/2 cup liquid egg white
1 cup old-fashioned oats
1 cup Greek Yogurt
1/2 cup protein powder
1 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon ground cinnamon
1 cup fresh blueberry

Directions:
Add all ingredients except the blueberries to your blender and blend until smooth.
Heat your pan or griddle over medium heat and spray with cooking spray. Pour the batter in 1/4 cup amounts onto the hot griddle, then top with about a tbs of blueberries.
When pancakes bubble, flip and cook the other side until golden brown (about 2 minutes on each side). Continue to cook until the batter is gone (you should get 12 total when using 1/4 cup batter per pancake), spraying pan with cooking spray between batches. Enjoy with your favorite pancake toppings.
Makes 12 pancakes- 4 pancakes per serving
