Big Batch Pumpkin Pancakes

Serves 6


Ingredients:

  • 2 cups Oat flour

  • 2  tablespoons Baking powder

  • 1  teaspoon Baking soda

  • 1  teaspoon Cinnamon

  • 1/2  teaspoon Salt

  • 1 (15 oz) can Pumpkin

  • 2 Eggs

  • 1 1/4 cup Greek Yogurt


Directions:

  1. The estimated total time to make this recipe is 12-15 Minutes

  2. Preheat griddle or skillet over medium low heat and spray with cooking spray.

  3. Mix the dry ingredients together in a medium bowl, then add the wet ingredients and mix until smooth batter forms.

  4. When griddle is warm, drop about 1/3 cup of batter for each pancake onto the prepared griddle and cook until pancakes are starting to bubble. Flip and cook until golden brown on the other side. Repeat with remaining batter. Enjoy warm!
