3 Sweet potatoes or a 18 oz bag of store bought cubed sweet potatoes (fresh or frozen) 1/2 teaspon Pepper 1/2 teaspoon Garlic powder 1/2 teaspooon Paprika 1 1/2 lbs Chicken breast or tofu 1/2 cups sugar free BBQ sauce

1/2 cup cheese
Directions:
Prepare the potatoes: Peel the potatoes and cut them into 1-inch cubes. (If you bought pre-cubed potatoes, skip this step). Spray a 9x13 baking dish with cooking spray. Preheat oven to 475 degrees. Place the cubed potatoes in baking dish and spray the potatoes with cooking spray. Toss in seasonings, and spray again. Roast the potatoes for 25-30 minutes, stirring once, until cooked through and potatoes are crispy and browned on the outside. While the potatoes are cooking, dice chicken into bite size pieces, and place in a bowl. Mix together the diced chicken and BBQ sauce, and refrigerate. Once the potatoes are fully cooked, remove from the oven and lower the oven temperature to 400 degrees. Top the cooked potatoes with the BBQ chicken mixture. Top with cheese if using. Bake for an additional 25 minutes. Serves 6
