Dinner
1 Onion
1 1/2 lb Chicken breast
2- 15oz cans black beans- drained and rinsed. vegetarian option
1/2 teaspoon Paprika
1 teaspoon Garlic powder
1 teaspoon Salt
1/2 cup Water
1 cup low-sugar bbq sauce
6 Sweet Potatoes
Toppings
1/2 cup Shredded cheese
4 Green onion
2 Avocados sliced
Directions
Dice onion and add to the crock pot. Add all remaining ingredients for the chicken or beans for the vegetarian option to the crock pot.
For the sweet potatoes, poke sweet potatoes with a fork a few times then wrap each potato tightly in aluminum foil. Add potatoes to the crock pot on top of the meat. (You could also roast them in the oven until tender).
Cover the crockpot and cook on high for 4 hours, or on low for 8 hours. Then turn off the crock pot and remove the potatoes. Unwrap from foil and let cool. Shred meat or mash beans for a vegetarian option, using two forks, and toss in BBQ sauce in the crockpot. Cut each potato in half and scrape the filling of the potato a bit with a fork to loosen it. Top with BBQ chicken. Top with cheese, green onions, and additional BBQ sauce if desired. Enjoy!
