Apple Slaw with a Crunch

Ingredients:
Dressing
3/4 cup Greek yogurt
1/4 cup Honey or agave
2 tablespoons olive oil
2 tablespoons Apple cider vinegar
1/2 teaspoon Salt
1/4 teaspoon Pepper
Salad
2 (10 oz) pkgs Coleslaw mix
1 1/2 cup Matchstick carrot
1/2 cup Apples
Green onion
3/4 cup Sliced almonds
1/4 cup Dried cranberry
Directions:

In a mixing bowl whisk together Greek yogurt, olive oil, honey or agave, and apple cider vinegar until smooth. Whisk in salt and pepper.
Slice green onions, apples and cabbage (if needed) and place in a large bowl along with carrots, green onions, almonds, and cranberries. Pour dressing over cabbage mixture and toss to evenly coat. Serve immediately, or chill until ready to eat. Enjoy within 1-2 days.
Serves 4.
Add 25-35g of protein.
Grilled or sautéed chicken, fish or lean beef or pork.
1 cup of legumes or tofu or even eggs!
