Dressing - mix together:
170g or 6 ounces plain Greek yogurt or plain soy yogurt
26g or 2 tablespoons light avocado mayonnaise
42g or 2 tablespoons honey
1/2 lemon, juiced
Salt and pepper, to taste
Salad - mix together and top with dressing:
1 pound boneless, skinless chicken breast (about 2 cups diced)
92g or 1 cup red grapes, sliced
118 or 1 cup grams apple, diced
2 celery stalks, sliced
2 green onions, sliced
55g or 1/2 cup slivered almonds
64g or 1/2 cup dried cranberries
Directions:
Make for the week. Serve on lettuce or pita, tortilla or a healthy cracker total yield 150 calories and 30-35 grams coming from carbohydrate.
