Apple Autumn Oatmeal & Pumpkin Cinnamon Swirl Baked Oats

The autumn oatmeal is the PERFECT meal for this autumn weather. This is the perfect vibe of autumn but not the cold. Who doesn't love apple and oatmeal? The perfect combination.

Apple Autumn Oatmeal:

Ingredients:

  • 40 grams raw oats (1/2 cup)

  • 16 grams protein powder (1/2 scoop)

  • 16 grams chia seeds (1 tablespoon)

  • Almond milk

Toppings:

  • 1 apple, diced

  • 1 teaspoon brown sugar

  • 1 teaspoon cinnamon

Directions:

  1. Put all ingredients EXCEPT protein powder in a pan. Cook until thick/creamy texture and then add in your protein powder and stir.

  2. Add toppings to oatmeal and enjoy with some cinnamon and nut butter!

Pumpkin Cinnamon Baked Oats:

Ingredients:


Oatbase:

  • 60 grams pumpkin puree

  • 35 grams greek yogurt

  • 40 grams blended oats / oat flour

  • 20 grams vanilla protein powder

  • 1/4 teaspoon baking powder

  • 1/2 teaspoon ground cinnamon

  • 8 grams low calorie maple syrup

  • 1/2 cup almond milk

Filling:

  • 1/2 teaspoon ground cinnamon

  • 6 grams sugar

  • 8 grams low calorie maple syrup

Frosting:

  • 10 grams light cream cheese

  • 10 grams greek yogurt

  • 4 grams powdered sugar

  • Splash of milk

Toppings:

  • 10 grams mini chocolate chips

  • 1 tablespoon pecans or walnuts

Directions:

  1. Preheat oven to 350 degrees F

  2. Mix oat base ingredients except for almond milk. Add the almond milk gradually to make sure the batter is not too runny.

  3. Pour the batter to the baking dish

  4. Bake for 10 minutes

  5. In the meantime, prepare the filling mix: mix all ingredients and add the filling mixture to a small plastic bag

  6. Prepare the frosting in a separate small bowl by mixing the frosting ingredients

  7. Remove the baked oats from the oven, make a swirl by using a chopstick (or spoon), add the filling mixture to the gap.

  8. Bake for another 7-10 minutes

  9. Remove from the oven, top with the topping and frosting! Enjoy!
