Ingredients
1.5 lbs chicken (boneless, skinless thighs or breasts)
1 lb dry lentils (any variety, rinsed and sorted)
6–8 cups water (adjust for desired consistency)
2 tablespoons garlic salt
Instructions
Prep the Ingredients:
Rinse and sort the lentils to remove any debris.
Cut the chicken into large chunks (optional, you can leave it whole for shredding later).
Combine in the Instant Pot:
Add the chicken, lentils, garlic salt, and water to the Instant Pot. Use 6 cups of water for a thicker stew or up to 8 cups for a soupier consistency.
Pressure Cook:
Close the lid and set the Instant Pot to "Sealing."
Select "Manual" or "Pressure Cook" on high pressure and set the timer for 25 minutes.
Natural Release:
Once the cooking cycle is complete, allow the pressure to release naturally for at least 10 minutes. Then carefully turn the valve to "Venting" to release any remaining pressure.
Check and Adjust:
Open the lid and stir the stew. If the chicken was left whole, shred it using two forks.
Taste and adjust seasoning with additional garlic salt or other spices if needed.
Serve:
